Today’s patient is Go Nanas Salted Caramel Banana Bread Mix, a gluten-free, dairy-free, vegan, and nut-free baking mix. This brand is also women-owned and non-GMO, and it carries the Kosher symbol (the circle U).

I purchased a three-pack on Amazon with Original, Chocolate Chip, and Salted Caramel flavors. Today we’re putting Salted Caramel on the exam table.

Preparation

For the Salted Caramel mix you need:

• 3 small ripe bananas
• 1 tablespoon maple syrup
• 2 tablespoons milk of choice
• 2 tablespoons oil

Instructions:

  1. Preheat oven to 350°F

  2. Mix ingredients

  3. Bake 20–30 minutes

I greased my muffin tin with avocado oil instead of using paper liners.

I also used my cordless KitchenAid mixer to mix the batter and an ice cream scoop to portion it.

Clinical mistake on my end:
I made them too large, so I only got 9 muffins instead of 12.

Because they were bigger, mine baked for 25 minutes.

Taste

These muffins came out golden brown on the outside with a light crisp edge.

Inside?

Soft, fluffy, and moist.

Some gluten-free muffins can be dry… these were not.

Texture
