🩺 Dinner Exam: Cilantro Lime Steak Tacos with Cauliflower Rice (3 Gluten-Free Finds!)

🍽️ Tonight’s Dinner on the Exam Table

Tonight we’re doing something a little different on the exam table: a three-product dinner review.

I used:
🥩 Shabu shabu steak (Costco)
🥦 Via Emilia Organic Cauliflower Rice
🌮 Rise & Puff Cassava Tortillas
🥑 Kevin’s Natural Foods Cilantro Lime Sauce

There are 21 servings in the Costco bag, and it contains four steamable pouches inside.

This product is not labeled gluten-free or dairy-free, but the ingredient list is simply cauliflower.

Cauliflower rice is a great way to increase vegetable intake while keeping carbohydrates lower.

On a MyPlate-style plate:

I browned it in a skillet for about 10 minutes.

I sautéed shabu shabu steak in olive oil.

When the meat was almost finished cooking, I added the cilantro lime sauce and reduced the heat.

First bite impressions:

🔥 not spicy (at least to me)

It paired beautifully with the steak.

• Cassava flour
• Modified tapioca starch
• Psyllium husk
• Water
• Avocado oil
• Honey
• Sea salt

Label highlights:

✔ No bleach or conditioners

Nutrition (1 tortilla):

Preparation instructions are important:

✔ keep refrigerated or frozen
✔ cook before eating

My experience:

✔ tortillas were soft
✔ they did not fall apart
✔ they did not really rise and puff

Leaving them longer on the pan didn’t help — they just started to burn.

I sprayed the pan with avocado oil, but honestly less oil would have been better.

Flavor:

You can definitely taste the cassava flour texture, which is typical for cassava-based breads.

Funny moment from dinner:

My husband liked them so much that I had to pause my own dinner and cook him another fresh tortilla mid-meal.

Fresh tortillas win every time.
