I spotted this at Mariano's - 150 W 63rd St (yes, I double-checked the town 😉).

This is a refrigerated 9 oz package that says:

As someone with Celiac disease and eosinophilic esophagitis, a flourless pasta option always catches my attention.

When I opened the package, I could smell garlic immediately.

When it hit the pan, I realized — there are a LOT of noodles in here. It expands more than expected.

🔥 Prep Test

Instructions:

  • Heat ⅓ cup water

  • Add 1 tbsp olive oil

  • Medium-low heat

  • Cover ~3½ minutes

I warmed the entire package at once.

It truly was fast.

👅 Taste & Texture

Before saucing:

  • Mild

  • Slight egg white flavor

  • Soft

  • Airy

  • Does NOT taste like traditional pasta

After tossing with Mutti Passata (sweet & velvety, product of Italy 🇮🇹):

  • Holds sauce well

  • Takes on flavor of whatever you add

  • Light texture

  • Easy to chew

It tastes more like egg whites than pasta — but once sauced, the flavor improves significantly.
