Symptoms
What are the ingredients and which ones did I have to swap to fit my needs?
Initial Examination
What was my first impression? Was the recipe very complex or could I whip it up in a jiffy. Did I need a “brain break” after reading all the steps a few times *I typically have to do this. Did I feel I could modify the ingredients easily or would it cause a recipe crash?
Side Effects
Were there any issues with my tissues? Did I make a few errors and can’t use white-out? Was there anything I needed to take a mental note on for next time? Did I have to call my mom and ask for help?
Treatment Plan
Let’s talk about it! What are the step-by-step steps?
Prognosis
I will give my overall impression. Was this a go or a no? Would I make this again or should I pass?

🩺 Recipe Rounds: Gluten & Dairy Free Chicken Nuggies
👩🍳 Credit where credit’s due: This recipe was originally found over at Gimme Delicious (love her site!) — but since my body goes Code Blue if gluten or dairy sneaks in, I scrubbed in and made a few modifications to fit my allergy-friendly chart. She titled Her’s as Chicken-Fil-A
Symptoms (Ingredients + My Swaps)
OG recipe called for regular flour → I swapped in King Arthur Measure-for-Measure Gluten Free flour mix (my MVP 🏆).
Milk → I used almond milk, but oat milk works just as well (tried and charted ✅).
Oil → I only fry with peanut oil, it keeps my gut calm and gives the recipe a clean fry.
Eggs → Added one extra egg (because my past kitchen “case studies” taught me gluten free batters behave better with backup).
No dairy, no gluten, no problem. 💪
Initial Examination (First Impressions)
Honestly? Not intimidating at all. I didn’t need to page Dr. Google or reread the steps 12 times (although yes, I did pause for a brain break halfway through — nurse habit).
The recipe was straightforward and allergy-friendly from the start, so I knew my “treatment plan” wouldn’t crash.
Treatment Plan (Step-by-Step)
Prep your dry ingredients.
Mix in the wet (my extra egg + almond/oat milk).
Heat up peanut oil until it’s ready for duty.
Follow the original instructions from Gimme Delicious for cooking — but know your batter will be slightly thicker with my swaps (a good thing here).
Clear, simple, and no emergency consults needed.
Side Effects (Things I Noted)
Batter consistency: My gluten free version was slightly stickier, but totally manageable.
Frying tip: Peanut oil gives it that golden crisp without a greasy aftertaste.
Allergy-friendly ✅ but still tastes indulgent — win-win.
Call to Mom moment? None this round (rare victory 🙌).
Prognosis (Final Thoughts)
⭐️⭐️⭐️⭐️⭐️
Would I make this again? Absolutely — this recipe gets a green light on my food chart. Family loved it, kids ate it, and I didn’t have to code my GI system afterward.
If you’re hunting for a gluten free, dairy free Chicken Nuggies recipe that’s easy, affordable, and safe, this one is a keeper.
Big thanks again to Gimme Delicious for the original recipe inspiration — I just “nursed” it into the gluten & dairy free unit. 🩺✨
